Delicious vegetarian beet salad: just 3 ingredients required

This summer is very hot all over the world. Frequently, I have seen on the social network that people don’t feel hungry, and I actually have experienced it myself. But not feeling a pang of hunger it is not a reason for missing a meal, our body needs to function and get energy from some food. When I looked in the store for some new vegetables, I found that there are fresh beets on the shelf. And, of course, I bought them. One morning, I was thinking of making something that I haven’t eaten for a while, and at that moment a memory of my Mom’s beet salad from childhood came to my head. I knew – this is it – a perfect salad that needs just 3 ingredients and takes 10 minutes to make it.

I want to share it with you because it is so delicious, simple and easy to make. Someone may say it is more autumn salad, but I believe that it is good all year around. I measured my ingredients, so you can repeat following my advice, but you can feel free to change the number of ingredients based on your taste.

Ingredients:

  1. Fresh or boiled beets (cooking time ca. 2 hours) – 500 g or 3 average size
  2. Onion – ca. 100 g
  3. Walnut – 40 g
  4. Salt, black pepper, dry chilli and oregano according to your taste

Step 1. Prepare beets

There are two options, of what I mean by prepare beets. The first one is to boil beets (put beets in the casserole with water, which should cover beets) and cook them for ca. 2 hours). The second one if you have already them cooked, either you bought them cooked, or you did it yourself earlier.

If you have boiled them yourself, then peel off skin, and if you bought them ready to eat, then shred them. I would recommend using a big shredder as pictured. Move your prepared beets aside.

Step 2. Prepare the onion dressing

Take one onion, clean it and cut into small squares as pictured. Warm up the pan with some vegetable oil – ca. 2 tablespoons, and add chopped onion onto the pan while it is still warming up. Add a bit of salt and black pepper (I used 2 teaspoons of salt and black pepper). When the pan has reached the highest temperature, decrease the heat to the average temperature (I set my stove to 5 out of 9). And fry onion, until it becomes golden. Don’t stir it too often because it will take you a very long time to get it a bit crispy and golden.

Step 3. Prepare walnuts

This step is one of the easiest. We will chop walnuts into smaller pieces as shown on the picture below. I like myself to cut them with a knife. I know it will take longer time, but chopped walnuts’ will look more accurate. So just do it as you like, but get them into smaller pieces.

Step 4. Assemble a salad

Mixing of all ingredients in one dish, this is what I mean by assembling this salad. Just take a deep bowl, put shredded beets into it, add fried onion including oil and add walnuts. Stir it well to distribute all ingredients evenly. Add more of salt and black pepper according to your taste. I also like to add a bit of dry chili and a bit of oregano. However, you can add some additional seasoning if you want.

P.S. This salad can be eaten itself, but I like to eat it with a pice of meat and a bit of potatoes.
