Bulgur with chicken and sweet potato

Hello, everyone!

Have you ever heard of Bulgur (type of whole grain)? I have learned about this cereal for about one year ago, and was surprised how delicious and simply it is. This cereal doesn’t require a lot of time and is very similar to rice, buckwheat, couscous and so on. If you especially interested in healthy eating, then my version of bulgur is definitely for you.

Ingredients:

  1. Bulgur – 2 cups (220 ml cup size)
  2. Water – 4 cups (same size as for bulgur)
  3. Sweet potato – 500 g
  4. Chicken meat – 350 g

Step 1. Fry chicken with sweet potato

Let’s start with washing bulgur, then put it in the casserole (should fit in 2.5-3 l of water) and set it aside. Then cut sweet potato into small cubes (like on the picture) and put it aside. Cut also chicken into small pieces like shown below. Then add 1 table spoon of vegetable oil (or butter) to a pan and warm it up. When pan is warmed up, add chicken and fry it for about 2-3 minutes. Add 2 teaspoons of salt, rosemary and black pepper according to your taste. Then add prepared sweet potato and keep frying at medium heat for about 10 minutes (stir it very 3 minutes).

Step 2. Put everything in one casserole

Meanwhile chicken is being fried with sweet potato, warm up water in the kettle and add boiled water (4 cups) into the casserole, and set it to start cooking. After 10 minutes of frying chicken with sweet potato add it to the casserole with bulgur and stir it well. Cover casserole with the lead and decrease the heat to 3 out of 9, and let it simmer for about 15 minutes.

Step 3. Small details that make difference

We are almost done and this step is mainly to stir the bulgur and add salt and pepper according to your taste. Then cover it with the lead, turn off the heat and let it rest for about 5 minutes. That’s all. Serve it as it is or with some fresh salad.
