Hello, everyone!
Winter is a time when we all want to warm up our body, and food is one of the ways. So, if you want something tasty, warm and simple, my recipe of chicken curry is a match for you. You would never believe that using ingredients available in every store can be used to make very delicious asian meal. I have developed my own recipe that taste not worth than the ones I have tried in Asian restaurants, but will require only 6 ingredients and a bit of time. You don’t need lemon grass nor fish broth as it is usually proposed in other recipes.
Main ingredients:
- Red bell pepper -100 g
- Yellow bell pepper – 100 g
- Onion (any time) – 100 g or more
- Broccoli – ca. 150 g (rest you can freeze for later)
- Chicken meet (can be skinless breast or boneless and skinless thighs) – 400 g
- Coconut milk – 250 ml
- Boiled water – 200 ml

Spices:
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Curry – 2 tsp
- Chilli flakes – 1/4 tsp
- Lemon juice – 2 tbsp or 30 ml
- Nutmeg (optional) – 1/8 tsp = 1 g

Step 1 – Prepare all ingredients
Cooking process will be very fast, therefore I recommend to cut all ingredients in the beginning and then just add them when it is required. I would start with cutting chicken into small squares as shown on the picture below. Then cut onion into 6 large pieces (example shown below). Then cut bell peppers also into large pieces. Take half of the broccoli and cut its florets into smaller pieces ( I cut mine into 2 halves). Put bell peppers and broccoli into one plate and set aside because we will need them in the very end of the cooking. Why, I will explain later.

Set vegetable aside
Hint: Clean your cutting board and knife properly after cutting raw chicken. This is important since raw chicken have different bacterias that are killed under high temperature, so we don’t want to cut other ingredients on the dirty cutting board.
Step 2 – Making chicken broth
Take a casserole suitable for 1.5 l, add 1 tbsp of vegetable oil and warm it up. Then put chicken in the warmed up casserole with oil and fry chicken for about 5 minutes, stirring it from time to time. Then add onion and keep frying mixture for another 3 minutes. Meanwhile, boil a water in the kettle and then add 200 ml of hot boiled water to the chicken with onion. Add 1 teaspoon of salt and 1/2 tsp of black pepper. Stir it well and let it cook for 10-15 minutes on medium heat (7 out of 9).

Butter the casserole and warm it up 
Start frying chicken for ca. 5 min 
5 minutes later – ready to add onion 
Add onion 
Add 1 teaspoon of salt 
Add 1/2 teaspoon of black pepper 
Add 200 ml of hot boiled water 
Let it boil for 15 min
Step 3 – Adding spices
Now, when the water has a taste of chicken and chicken was absorbed a salt, we can add coconut milk and other spices listed above. I would recommend to adjust amount of chilli flakes according to your preferences. If you follow my recommendations, I would say that it will be medium level of spiciness. Let everything cook at 4 out of 9 for at least 30 minutes, I will wait 45 minutes before adding bel peppers and broccoli.

Let it slowly cook for 45 min
Hint 1: The longer you cook the curry, the more intense taste you will get.
Hint 2: At this stage, I would also cook a rice, so it will be ready when you curry is ready. To cook a rice, just follow instructions on the package.
Step 4 – Adding bell peppers and broccoli
Congratulations! We are almost done. At this stage, the only thing we need to do is to add bell peppers and broccoli. Mix it well, and cover casserole with the lid, this will prevent liquid from evaporating. When you have added vegetables, it will look like you don’t have enough liquid in the casserole. No worries, in 10 minutes bell peppers and broccoli will become soft and shrink a bit. Cook it for 10-15 minutes and its ready.

Last step – serving food
