More ideas are coming to my mind. This time I will share with you my recipe of new healthy dessert. About half a year ago, I was going through the website of a program I completed to lose weight and found an interesting dessert that I liked a lot. Now, I am focused on healthy eating and decided to make small changes in the recipe that will make it even better.
Have you ever thought of a dessert based on 3 simple ingredients? This dessert takes about 15 minutes to make. You don’t need to bake it. It doesn’t require flour, eggs, nor milk.
Ingredients:
- Cottage cheese (4% or 5%) – 400 g
- Honey – 5 teaspoons or 25 g
- Dark chocolate (70%) – 60 g
- Optional ingredient – Almond milk (regular milk) – 2 tablespoons
Hint: If your cottage cheese has a lot of liquid, you will not need my optional ingredient. Otherwise, just a bit of almond or regular milk will help to improve the consistency of cottage cheese.

Step 1. Making chocolate spheres
The best to work with chocolate, is to melt it on the steam. Boil water in the casserole and take a bowl that will fit in the casserole but doesn’t touch the water (as pictured). Keep chocolate on the steam until it’s melted down. Then take a brush and spherical silicone moles (or any other silicone forms you have). Brush the chocolate with a thin layer in the cold like it is shown on the picture. Make 2 layers wait for 2 minutes, add 1 more layer and put silicone cold in a freezer for 10 minutes.

Step 2. Cottage cheese mixture
While we are waiting for our spheres to freeze, let’s mix cottage cheese with honey in the blender. If blender is not strong enough, then add 1 tablespoon of milk (regular or almond, etc.) and blend it again. If it is still too thick, add 1 more tablespoon of milk. You should get consistency as I have on the picture. That’s all.

Step 3. Assembling the little drops of heaven
Take spheres from the freezer and put blended cottage cheese in the spheres until they are filled. Put this spheres for at least 30 minutes in the freeze, or until you need them.

- This amount of ingredients is enough for 6 spheres
If you left them in a freezer for a longer time, then push the spheres from the form very carefully while they are frozen. Put them on the plate on which you want to serve them, and let them warm up in the fridge for 2-3 hours. My freezer is set to -18°C, so I need about 3 hours.
