Squash pancakes with garlic sour cream sauce

During this summer, I have become so creative regarding vegetarian recipes. You are not that hungry, but still, need to eat something. Also, I am a huge fan of a squash and like to cook in different ways. This time, I propose you to try my invention – very delicate and tasty squash pancakes. It is not that hard to make them, and it doesn’t require fancy ingredients.

Ingredients for pancakes:

  1. Squash – ca. 500 g
  2. Carrot – 160 g
  3. Onion – 150 g
  4. Egg – 1 stk
  5. Flour – 150 g
  6. Salt after your taste or – 1 tablespoon
  7. Black pepper after your taste or – ½ tablespoon

Ingredients for sauce:

  1. Sour cream – 3 tablespoon
  2. Lemon juice – 1 tablespoon
  3. Garlic – 1 or more cloves
  4. Salt and pepper as you like

Step 1. Prepare vegetables

Don’t forget to wash squash and then shred it on the shredder that is shown on the picture. Put shredded squash in the big deep bowl. Then clean carrot and also shred it, add ready carrot to the squash. Now we need to peel off skin from the onion and shred it but on another type of shredder that is shown on the picture. Mix all vegetable. You may find some recipes where you need to squeeze a juice out of squash, but I prefer to use it and just add more flour.

Step 2. Final preparations of squash pancakes mixture

Mix in 1 egg to the vegetables, then salt and pepper, and finally, add all flour. Mix it well until it looks like on the picture.

Step 3. Fry pancakes

Warm up a pan with a bit of vegetable oil on it. Then take a tablespoon filled with pancake mixture and form a pancake in shape you like when the pancake mixture is in the pan. Keep feeling the pan with your pancakes and let them cook on the middle heat (5 out of 9) for at least 3 minutes. Then flip it over and continue frying at the same time. You need to be sure that pancake is not burned outside but raw inside. It is better to take your time at this stage. Repeat the process until you are done with the mixture. If you have a non-Teflon pan as I do, just add a bit of vegetable oil for a new set of pancakes. I have gotten over 30 pancakes.

Step 4. Garlic sour cream sauce

Mix in a separate bowl sour cream, juice of a lemon and chopped garlic. Add salt and pepper after your taste. That’s all.

You can eat these pancakes by themselves or have a piece of meat with them.
