I have never thought that I will be the person creating so many vegetarian recipes by myself. All the time I was a meat person, I had to have meat on my plate in order to stop my hunger. However, the more healthy food I have eaten, less meat is on my plate. Sometimes I even can imagine myself a vegetarian but then I think of a nice burger, or a big piece go meat….Oh…No..I am definitely not a vegetarian, but it is nice to give your stomach a break.
This recipe was created due to my laziness and absence of many ingredients in the refrigerator. I just took what found in the fridge (I always have some strange ingredients like coconut milk hidden somewhere in the kitchen), and here they are the best 15 minutes spaghetti I have ever made. Actually, my boyfriend fell in love with them and asked me to share this recipe. So when I am not home, he could make them himself.
Ingredients for 4 portions:
- Dry spaghetti – 275 g
- Mushrooms – 250 g
- Onion – 125-175 g
- Coconut milk – 200 ml
- Parmesan cheese – 30 g
- Fresh basil – 4 g or 2g of dry
- Salt and black pepper after your taste

Step 1. Prepare ingredients for the sauce:
Before starting preparing ingredients for sauce, we should warm a water for spaghetti first cause it will take some time. Take a big casserole (for more than 2 l), fill ½ of it with water and add 1 tsp of salt., and set it to warm up.
While water for spaghetti is warming up, let’s prepare our ingredients. We will start with onion, clean it and cut as pictured, and put it aside. Then wash mushrooms, and slice them as it is shown on the picture, and also put them aside. Wash fresh basil and separate the top leaves for decoration, and chop rest of the basil. And shred the ca. 30 g of Parmesan cheese (we will need it in the end of sauce preparation).

While we were preparing all the ingredients, water has started to boil. We can cook our spaghetti.
Step 2. Cook spaghetti
The best way to cook your spaghetti, it is to follow the instruction on the bag. Some require 5 minutes, other 10 min. My spaghetti needs to boil for 8 minutes, and it is a perfect time to make a sauce.
You can divide break spaghetti in half, but I like it long and therefore has a small secret. I put them in the casserole like in the picture, and after 20 sec with the help of a spoon, I push them in the water. Then I set a timer to 8 minutes, and start making the sauce.
- Put spaghetti in boiling water, wait for at least 20 seconds
- Push it with a spoon towards water
Step 3. Make a sauce
Take a big pan, add 1 tbsp of vegetable oil and warm it up at temperature 6 out of 9. Add cut onion and cook it until it becomes golden. Then add mushrooms and fresh basil, fry vegetables until they become golden and then add salt and black pepper after your taste. The last step is to add coconut milk and parmesan cheese – mix it well, and our sauce is ready. Somewhere around that time, our spaghetti should be ready – if not, then decrease temperature for the sauce to a minimum. But if your pasta, was ready earlier, you just drain the water and set it to stay for a few minutes while you are finishing your sauce.
- Warm up a1 tbsp of vegetable oil
- Start with frying onion
- When golden, mushrooms can be added
- Add mushrooms
- Add chopped basil
- Add salt and black pepper when ingredients are golden
- Add coconut milk
- Then parmesan cheese
- Sauce is ready
Step 4. Mixing spaghetti and sauce
Drained spaghetti, add to the pan with sauce and stir it. That’s all – spaghetti is ready. You can serve it as it is or with some fresh salad.
- Drain spaghetti
- Add spaghetti to the sauce
- Mix ingredients
- Ready to be served and eaten
