Ivannacooks’ recipe of strawberry cheesecake: no sugar and no flour

A healthy lifestyle is great but when it comes to desserts, it is not always that easy. Most of the desserts have a lot of sugar and flour in it. I was looking for different recipes and was not satisfied by ingredients (sugar, sugar and a lot of sugar…). However, one day when I ran outside, an idea came to my mind: “What if I try to create my own recipe of healthy dessert?!”.

I gave a second thought to this idea and was very happy to be challenged like this. I have created many dishes without recipes for lunch and dinner, but never for a dessert. But what type of dessert, this was another question to be answered. I started focusing on healthy ingredients, and when I saw a cottage cheese and oatmeal, I have gotten a feeling that it must be a cheesecake – healthy cheesecake with no sugar in it.

I have worked on it, had a lot of fun (especially with measuring proportions), and the result was amazing. The recipe is so easy to make, ingredients are healthy, and it really looks like cheesecake from some bakery. I made two small cheesecakes 550 g of each that my boyfriend and I had it for breakfast for two days in a raw.

Here are the ingredients:

Cheesecake bottom:

  1. Oatmeal – 135 g
  2. Hazelnuts – 50 g
  3. Walnuts – 40 g
  4. Chia seeds – 15 g
  5. Honey (from flower) – 8 tbsp
  6. Warm water (ca 50 °C) – 10 tbsp (if it will be to dry add more water)

Bottom or cookie ingredients

Cheesy part:

  1. Cottage cheese – 300 g
  2. Sour cream (or greek yogurt) – 100 g
  3. Strawberry – 165 g (or more)
  4. Honey (flower) – 3 tbsp
  5. Gelatin – 7 plates
  6. Warm water (ca. 80 °C) – 75 ml
  7. Mint is optional but it adds the freshness

Cheesy ingredients

Step 1.  Cheesecake bottom

We will start with baking a cheesecake bottom – sort of a cookie. Set oven to 180 °C to warm it up.

First, add to a stand mixer bowl oatmeal, chia seeds, hazelnuts and walnuts and chop them together. Move mixture to a regular bowl and then add honey and 5 tbsp of warm water, mix it. Then add 2 tbsp of water and mix it again. Add 3 tbsp of water and mix it again. If consistency is still too dry, add each time 1 tbsp of water until you get a mixture as it is shown in the picture.

If you are making one big cheesecake, take a baking form not bigger than 16 cm and cover the bottom of it with butter. And then fill with a mixture and set it in to bake for 20 minutes. When the cookie is ready, let it cool down for at least 1 hour and 30 minutes.

Step 2. Prepare cheesy part

We will start working with gelatin plates. Put 7 plates and very cold water for 5-7 minutes. While gelatin is absorbing water, prepare a 75 ml of warm water (ca. 80 °C) for gelatin (it should be boiling because gelatin will lose its properties in boiling water). When out 7 minutes are done, drain the water from gelatin (like in the picture) and then add it to earlier prepared warm water, stir until gelatin dissolves.

Add honey, the mixture of gelatin and water to a mix of cheese and sour cream, and mix it well. Try the mixture, and if you would like it to be sweeter, just add more honey. The mixture is done, but I will add a bit of mint and mix it again (mint will bring a freshness to this dessert, and it is an excellent combination with strawberries) or you can skip this step.

Our cheesy part is ready, and we will need strawberries a bit later.

Step 3. Assembling a cake

Take our cookie or cheesecake bottom, open the form and set baking, a sheet around it like it is shown in the picture.  Cut strawberries into small pieces, and add them on top of a cookie. Cover strawberries with the cheesy part. That’s all. Now we need to put a cheesecake into the fridge and wait about 4-5 hours or if you can wait overnight, it is even better.

Step 4. Decoration and eating a cheesecake

My cake stayed in the fridge overnight, and we had it for breakfast. The first one I decorated with melted chocolate and additional strawberry. The second one I decorated just with strawberries.
