Hello, everyone!
As you already know, I am a big fan of healthy desserts, and I am looking for a new inspiration all the time. A recipe that I will share today with you, I found in the book of Norwegian food blogger – Trine. This is healthy and easy to make dessert that can impress you, your friends and family. Just try it!
Ingredients:
- Pineapple – 1 pcs
- Vanillin – ½ teaspoon
- Water – 75 ml
- Caster sugar (regular sugar) – 75 g
- Chili – 2-3 cm
- Vanilla ice-cream – for serving

The first step is to turn on the oven and set it to 220 degrees Celsius. While oven is preheating, we can clean pineapple as it is shown on the picture, and cut it into ca. 1×1 cm pieces (also shown on the picture – don’t forget to throw away a core from pineapple). The prepared pineapple put into the form for baking and leave it for now.

The next step is to make a caramel with chili. Cut chili into small pieces as shown on the picture (if you like spicy food, you can use more chili). Take a small casserole, mix water with vanillin and regular sugar, and set it to boil. Let it cook until sugar melts (don’t stir it) and then add the cut chili to the mixture. Stir it well and right away add it to the pineapple in the form. Then mix all ingredients. Put into the oven for 25 minutes.

25 minute later…
Our baked pineapple with chili is ready. Take it out from the oven and let it cool down a bit. Ready pineapple can be served both cold and a bit warm. I like it with vanilla ice-cream and cup of coffee. You can also add some fresh berries.
