I was planning to share with you today a recipe for french macaroons, but to be honest – I am still searching for the best recipe that will definitely work for you. Instead, we will make today super healthy and easy to make broccoli soup-puree. I love to make with chicken, but it tastes very good with no meat in it as well. In addition, if you want to make it without meat – 15 minutes will be enough to make it.
Ingredients:
- Broccoli – 1 pcs
- Fresh ginger – 9 g (after cleaning and grinding – 5g)
- Heavy cream for food (we have it Norway – 20% fat) or sour cream –
- Dry mix of basil, thyme, oregano rosemary and lavanda (if you have) – 1 teaspoon (basil is the most important)
- Water – ca. 750 ml
- Chicken meat is optional – 150 g

Step 1. Chicken broth
If you decided to make broccoli soup-puree with chicken, then follow this step. Otherwise, please skip it and go directly to the next step.
We will prepare chicken broth first. Wash and cut a chicken meat into medium size pieces as it is shown on the picture. In the casserole add ca. 750 ml of water. You will need more water, if your broccoli is bigger than mine or you use more chicken. Add 1 teaspoon of dry basil (or mix of any seasoning you have from the list above), 3 teaspoon of salt and black pepper. Let it boil and then add chicken, reduce the heat. Let it cook at least for 25 minutes.

Step 2. Broccoli time
For those, who are starting from this moment: add water to casserole (750 ml), add all seasoning including 3 teaspoons of salt and black pepper, and let it boil.
For everyone: wash broccoli and cut the florets as it is shown on the picture. Add broccoli florets to the casserole and let it cook for 10 minutes. At this time, clean a ginger and grind it as it is shown on the picture, and add it to the boiling broccoli.

Step 3. Broccoli soup-puree
For the better understanding of proportions, I weighted cooked broccoli and chicken. I have got 300 g of ready broccoli and 100 g of chicken meat (rest I will use for decoration in the end). For this amount of ingredients, you will need 150 ml of broth and 100 ml of heavy cream. However, the main trick here is to add liquid a bit at a time and check the consistency.

- Put first broccoli in bowl to puree
- Add chicken on top
- And 100 ml of broth
If you make it without chicken, less broth is needed at this stage. I would recommend start with 2 table spoons of broth at a time. You can use both blender or hand blender (shown on the picture).

When your soup-puree looks like mine on the picture, just add more salt and pepper based on your preferences and it is ready.

I like soup-puree because it is easy to make, you can make it from different vegetables and it is cheap. You can experiment with it, add different seasoning or make it more liquid.
