I have a friend of friend who is allergic to eggs, milk and other stuff. A few years ago, I was invited to a party and preferably with some snack. This girl have heard a lot about my famous crepes with mushrooms and wanted to try them. But her allergies was a problem.
When I was a student in Ukraine, very often I had limited budget and used to make crepes from water, eggs and flour. So a half of solution regarding milk allergy, I have already had. I knew that egg is very important ingredient, and googled how it is interchanged in other recipes. I found that baking soda should help. So I tested my mix of water and flour by adding a drop of baking powder and then frying one crepe. It didn’t work, I added more baking powder and then in a few crepes, I finally got soft and thin crepes.
Nowadays, I know that many people due to different reasons cannot eat eggs or drink milk, and therefore I decided to recreate a recipe of crepes/flat pancakes without milk nor egg.
Hint: don’t add sugar to them, sugar will start melting on the pan and it will be impossible to flip the crepe on the other side. If you want to eat them sweet, eat them with a jam, peanut butter, Nutella or whatever you like.
Ingredients:
- Flour – 150 g
- Water – 270 ml
- Baking powder – 2 g
- Vegetable oil – 2 tablespoons
- Pinch of salt – optional

Step 1. Make a mixture
Take a deep bowl and mix in it flour and baking powder (and salt). Then add 100 ml of water and mix it well. Then add 100 ml of water more and again mix it well. And the add a rest of water, and again mix it well. Mix the mixture until it is smooth, when it is smooth mix in 2 tablespoons of vegetable oil. And let the mixture rest for 15 minutes.

- After all water is mixed in
- Add 2 tablespoons of vegetable oil
- Set mixture to rest for 15 minutes
Step 2. Frying crepes/flat pancakes
Take a pan and grease it with a bit of butter. Warm it up and then pour crepes’ mixture on it as pictured. Fry until it becomes white, and then flip it over. Fry for another 30 seconds and take the crepe on a plate. Reduce the heat to 7 out of 9 or equivalent on your stove, and continue frying one by one until all mixture is used.

Step 3. Serving crepes
This crepes do not have any strong taste, they are more neutral. That’s why it is very important to serve them with something. My choice stoped on the cottage cheese and jam from berries and a bit of chocolate on top.
