Traveling is a way to get to know yourself, what you like and don’t. After I visited the United States and tried my morning sandwich with a bagel, I wanted to make this type of sandwiches in Norway. First, I found bagels in the store, but just one store sells them and very often they are not fresh. So, one day I decided to make them myself. I have spent a lot of time looking for a good recipe, and, yes, I found it. This recipe doesn’t require many ingredients and time. I will share with you its version in pictures. If you are a beginner, and just starting to learn the art of baking, this recipe is a perfect choice.
Ingredients:
- Dry yeast – 2 tsp
- Granulated sugar – 1 ½ tbsp
- Warm water (40-50 °C) – 1 ¼ cups
- Flour – 500g
- Salt – 1 ½ tsp

Step 1. Five minutes with yeast
Divide water in two parts, ½ cup of warm water for one, and rest of water for the next step. Take 2 tsp of dry yeast, put them in the bowl of stand mixer or just a bowl where you will make dough for bagels. Add ½ cup of warm water and sugar to the bowl with yeast, and mix it. Let it rest for 5 minutes.

Step 2. Make a dough for bagels
When 5 minutes are done, you will get a mixture like it is shown in the picture. Add there salt, flour and rest of the water. Either use a stand mixer on low speed or just mix the dough with your hands. To get a firm dough will take approximately 7 minutes, and it ready when it looks like in the picture. It shouldn’t stick to your hands. Cover bowl with clean towel and let the dough rest for one hour.

Step 3. Rested dough
In one hour the dough doubled in size, so punch it down and let it rest for another 10 minutes also covered under the towel. Meanwhile, warm up the oven to 220 °C, fill big casserole with water and boil the water.

Step 4. Form bagels
The dough is ready, and bagels can be formed. First of all, divide the dough into two equal parts (like on picture), then divide these parts in half so that you will get four equal parts. Then divide each portion in half so that you will get eight equal parts of the dough. Each piece is for one bagel. Shape it in the ball and then make a hole with a thumb (like on the picture) – repeat it for the rest dough pieces.

- And in two more
- Form bagel
- Ready for boiling
Step 5. Boil and bake bagels
Depending on the size of a casserole, the number of bagels that can be boil at one time will defer, but the way of doing it the same. Put 3-4 bagels in the boiling water, boil it for 1-2 minutes (more you cook, chewier it will be) on each side. To flip it over, use a wooden spoon. Ready bagel place on (silicon) baking sheet. When all bagels are boiled, put sesame seeds on top (if you like). Bake bagels for 20 minutes or until they will become golden.

- Place boiled bagels on the baking sheet
- Bagels ready to be baked
Step 6. Cool down bagels
After bagels are done, let them cool down. You can freeze them, you eat them right away.
