Everyone at least once in his/her life has a question to answer: “What else can I make for breakfast?”. In Norway, people like to eat waffles with brown cheese, jam, and sour cream, but sometimes you want to try something new.
Last year, I have traveled to Belgium, and when I saw Belgium waffles in one of the street stores, I was so amazed by the variety of combinations. Of course, I couldn’t try them all, but I was dreaming of finding a way to do it in the future. I started looking for different recipes, testing them out until I found a recipe that I will share today with you.
The taste of the waffles reminded me a lot that taste from Belgium, and now every Sunday I make them for my boyfriend and me. You can combine them with different fruits, nuts or whatever you like.
To make 8 waffles (good for 2 persons), you will need these ingredients:
- Flour – 1 cup or 130 g
- Baking powder – 8 g
- Sugar – 75 g
- Egg – 1 large
- Milk – 200 ml
- Melted butter – ½ cup or 115 g
- Vanillin – ca. ½ teaspoon

Step 1.
We will start with mixing all dry ingredients (take a large bowl for dry ingredients), namely flour, sugar, baking powder, and vanillin. Sieve flour to add more air in the batter and your waffles will be more fluffy, then add sugar, vanillin and baking powder. Mix all together.

Then separate egg white and egg yolk and put them in separate bowls. For egg white, please check that bowl is dry and clean (this is important for whipping it to the stiff peaks).

Step 2.
Beat an egg yolk for a minute and then add milk and butter. Mix it well, and then add to the dry ingredients. Then, mix all ingredients until it looks like on the picture below.

Step 3.
Take egg white and whip it until stiff peaks (they will not move in the bowl) as it is shown on the picture. Then, take whipped egg white and mix it with batter (earlier prepared mixture).

Step 4.
Take waffle iron, spray a fat on it and turn it on to warm up. Take ½ cup of batter and pour it on the one side of waffle iron (remember that butter will double in size). In 3-5 minutes, your waffles are ready.

Serve your waffles with fresh berries, syrup, chocolate or anything else you wish.
